Gonzalez, a food science major, won second place in the grains and cereals competition

Ana Gonzalez, Ph.D., Food Science, won the Grains and Grains Association’s National Student Research Poster Competition for the second time and received a $750 prize.

Gonzalez was awarded the Outstanding Student Research Paper in the Division of Carbohydrates at the recent annual meeting in Minneapolis, Minnesota, on “Relationship of Corn, Potato, and Pea Starch Structure Changes and Crystallization to Acid Hydrolysis and Hydrothermal Treatment.”

He won in the same category and category two years ago for his research work “Improved Formation of Porous Surface Structure of Potato Starch”. Three years ago, he finished third in the same competition.

Gonzalez is recommended by Ya-Jane Wang, professor of carbohydrate chemistry in the Department of Food Sciences in the Dale Bumpers College of Agriculture, Food and Life Sciences and research scientist at the Arkansas Agricultural Experiment Station. Department of Agricultural Systems.

Originally from Colombia, Gonzalez earned a bachelor’s degree in food engineering from the Universidad de C√≥rdoba. During his senior year in college, he worked as an intern in the department’s hydrocarbon chemistry lab, which led him to pursue a Ph.D.
