Students participate in food science challenges to earn UNL scholarships

LINCOLN, Neb. (KLKN) – High school students from Nebraska and other states participated in a food science challenge Friday at UNL’s Food Science and Technology Building to win $5,000 in scholarships.

The challenge was to recreate boxed cake mixes using commercial food coloring and other ingredients.

After baking the cake, the students went to the lab to analyze the color and texture and compare their cake to the boxed cake.

Professor Curtis Weller, head of the Department of Food Science and Technology, hopes that events like this one will get more students interested in the field.

“It’s very important for us to get that across to the students,” he said. “We all eat and we’re all interested in the food we have. There’s a great need for trained people.”

Each student who completed the day’s assignment or project received a scholarship that could only be used if they attended UNL and enrolled in the food science department.
